Wandering around my neighborhood I found some old aromatic cedar fencing that a neighbor was throwing out. Though cedar is a softer wood not always favorable for butcher-block, I chose to use the end-grain (always the hardest part of any wood species), and proceed. In the end cedar is plenty hard enough in this formation to serve as a reliable cutting surface. In the end, all I coated this piece with is a food-safe polyurethane finish.
